Native varietal Catarratto Extralucido grapes are de-stemmed and pressed, fermenting first in stainless steel then re-fermented in bottle using must from the same harvest. Frizzante-level bubbles. Undisgorged. A light deposit of lees on the bottom provide for a softened yeasty quality on the palate.
